  • Taste and adjust with more lemon juice if desired.
  • Prepare the Bruschetta Topping
  • In a bowl, combine diced tomatoes, red onion, olive oil, balsamic vinegar, basil, salt, and pepper.
  • Stir gently.
  • Let sit for 5–10 minutes to allow flavors to blend.
  • Assemble
  • Spread whipped feta evenly into a shallow serving dish.
  • Spoon bruschetta topping over the top.
  • Drizzle with olive oil or balsamic glaze if desired.
  • Garnish with extra basil or cracked pepper.
  • Serve
  • Serve immediately with toasted baguette slices, crostini, crackers, or fresh vegetables.

Notes

  • Use block feta for the smoothest texture.
  • Pat tomatoes dry to prevent watery topping.
  • For best presentation, assemble just before serving.
  • Store whipped feta separately for up to 4 days refrigerated.
  • Bring whipped feta to room temperature before serving for ideal creaminess.
  • If dip feels too thick, blend in 1–2 teaspoons olive oil.
