Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and poke holes in your sweet potatoes. Rub them with olive oil, salt, and pepper, then wrap in foil.
  • Place sweet potatoes directly on the oven rack and bake for 45-60 minutes until tender.

Cooking

  • While the sweet potatoes bake, heat a skillet over medium heat and add ground beef.
  • Season with salt, pepper, and any additional spices, cooking until browned and fully cooked through (about 5-7 minutes).

Assembly

  • In a large bowl, combine chopped lettuce and diced tomatoes. Toss lightly with olive oil, salt, and pepper.
  • Remove sweet potatoes from the oven, cool slightly, cut open, fluff insides with a fork, and add a scoop of ground beef on top.
  • Add salad mix and finish with a sprinkle of shredded cheese.

Serving

  • Mix ingredients slightly for a burst of flavors or keep them separate for a beautiful presentation.

Notes

Customize your bowl by adding avocado, switching proteins, or adding toppings like jalapeños or corn. Store leftovers separately to maintain texture and consume within three days.
