Ingredients
  

  • 4 salmon fillets skin-on or skinless
  • 2 cups fresh spinach
  • ½ cup crumbled feta cheese
  • 2 cloves garlic minced
  • 2 tablespoons cream cheese optional
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: fresh herbs parsley or dill
  • Optional: paprika

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Pat salmon dry and cut a pocket into each fillet.
  • Sauté spinach and garlic in a pan until wilted.
  • In a bowl, mix spinach, feta, cream cheese (if using), and lemon juice.
  • Season the mixture lightly.
  • Stuff each salmon fillet with the spinach mixture.
  • Place in a greased baking dish.
  • Drizzle with olive oil and season tops.
  • Bake for 15–20 minutes until salmon flakes easily and reaches 145°F (63°C).
  • Let rest for 2–3 minutes, garnish, and serve.

Notes

  • Use thick salmon fillets for easier stuffing.
  • Avoid overstuffing to keep filling intact.
  • Do not overcook salmon to maintain moisture.
  • Store leftovers in the fridge for up to 2 days.
  • Reheat gently to avoid drying out.
