- 4 medium carrots peeled and sliced
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 –3 tablespoons water for blending
- Optional Garnish
- Olive oil drizzle
- Paprika
- Chopped parsley
Roast the Vegetables
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Spread the sliced carrots on the baking sheet and drizzle with olive oil.
Slice the top off the garlic bulb, drizzle with a little olive oil, and wrap it loosely in foil.
Place the wrapped garlic bulb on the same baking sheet.
Roast for 25–30 minutes, until:
Carrots are tender and lightly caramelized
Garlic becomes soft and fragrant
Remove from the oven and allow the garlic to cool slightly.
Squeeze the roasted garlic cloves out of the bulb.
Blend the Dip
Add the following ingredients to a food processor or blender:
Roasted carrots
Roasted garlic
Tahini
Lemon juice
Ground cumin
Salt
Black pepper
Blend until smooth and creamy.
Add water gradually while blending until the dip reaches your desired consistency.
Finish and Serve
Transfer the dip to a serving bowl.
Drizzle with olive oil and garnish with paprika or chopped parsley.
Serve with pita bread, crackers, or fresh vegetables.
