  • Seasoning & Finish:
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 –3 tablespoons hot honey
  • Extra fresh herbs for garnish optional

Instructions
 

  • Preheat & Prepare
  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • If carrots are thick, slice lengthwise for even roasting.
  • Toss carrots with olive oil, salt, and pepper.
  • Roast the Carrots
  • Spread carrots evenly on baking sheet.
  • Roast for 20–25 minutes until tender and lightly caramelized.
  • Remove from oven and let cool slightly.
  • Prepare the Puff Pastry
  • Roll puff pastry gently into a rectangle.
  • Transfer to a parchment-lined baking sheet.
  • Score a 1-inch border around the edges (do not cut through).
  • Prick the center with a fork.
  • Pre-Bake the Base
  • Bake pastry for 10 minutes.
  • Remove from oven and gently press center down if overly puffed.
  • Make the Herbed Goat Cheese
  • In a bowl, mix softened goat cheese with thyme, parsley, and optional lemon zest.
  • Stir until smooth and spreadable.
  • Assemble the Tart
  • Spread herbed goat cheese evenly inside the pastry border.
  • Arrange roasted carrots neatly over the cheese layer.
  • Final Bake
  • Return to oven and bake 10–15 minutes until pastry is deep golden and crisp.
  • Finish & Serve
