Ingredients
  

Dry Ingredients

  • 1 cup rolled oats (gluten-free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice

Wet Ingredients

  • 1/2 cup almond butter Substitute with peanut butter or sunflower seed butter if desired.
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (substitute maple syrup for vegan) Maple syrup can be used for vegan options.

Preparation

  • In a large bowl, combine rolled oats, protein powder, and pumpkin pie spice. Stir until evenly mixed.
  • Add in your almond butter, pumpkin puree, and raw honey. Mix well until all ingredients are fully combined.
  • With clean hands, take small amounts of the mixture and roll them into balls about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
  • Chill in the refrigerator for at least 30 minutes to firm up.
  • Once firm, enjoy immediately or store in an airtight container in the fridge for up to a week.

Notes

For sweeter protein balls, adjust sweetness with more honey or your favorite sweetener. Experiment with add-ins like dark chocolate chips, nuts, or seeds for added texture and flavor.
