- 4 boneless skinless chicken thighs or breasts
- 1 cup jasmine rice uncooked
- 1 can 13.5 oz coconut milk
- 1 cup chicken broth
- 2 cloves garlic minced
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional add-ins:
- Chopped cilantro
- Diced bell peppers
- Green onions
Heat olive oil in a large pan over medium heat. Season chicken with salt and pepper, then sear for 3–4 minutes per side until lightly golden. Remove and set aside.
In the same pan, sauté garlic for about 30 seconds until fragrant.
Stir in uncooked rice, coconut milk, and chicken broth. Mix well.
Return chicken to the pan, placing it on top of the rice.
Cover and cook on low heat for 18–22 minutes until rice is tender and chicken is fully cooked.
Stir in lime juice and lime zest.
