Ingredients
  

  • 4 boneless skinless chicken thighs or breasts
  • 1 cup jasmine rice uncooked
  • 1 can 13.5 oz coconut milk
  • 1 cup chicken broth
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional add-ins:
  • Chopped cilantro
  • Diced bell peppers
  • Green onions

Instructions
 

  • Heat olive oil in a large pan over medium heat. Season chicken with salt and pepper, then sear for 3–4 minutes per side until lightly golden. Remove and set aside.
  • In the same pan, sauté garlic for about 30 seconds until fragrant.
  • Stir in uncooked rice, coconut milk, and chicken broth. Mix well.
  • Return chicken to the pan, placing it on top of the rice.
  • Cover and cook on low heat for 18–22 minutes until rice is tender and chicken is fully cooked.
  • Stir in lime juice and lime zest.
  • Garnish with cilantro or green onions and serve.

Notes

  • Use jasmine rice for best texture and flavor absorption.
  • Avoid stirring too much while cooking rice.
  • Use full-fat coconut milk for a creamy result.
  • Keep the pan covered to cook rice evenly.
  • Let the dish rest briefly before serving.
