Ingredients
  

  • 2 cups all-purpose flour or almond flour
  • ½ cup butter softened
  • ¾ cup monk fruit sweetener
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Optional Add-Ins
  • Lemon zest
  • Almond extract
  • Sugar-free sprinkles

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream together butter and monk fruit sweetener until smooth.
  • Add egg and vanilla extract, mixing until combined.
  • In another bowl, mix flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture and mix into a dough.
  • Scoop and roll dough into balls, then flatten slightly on the baking sheet.
  • Bake for 10–12 minutes until edges are lightly golden.
  • Let cookies cool before serving.

Notes

  • Use a monk fruit blend for best baking results.
  • Do not overbake to keep cookies soft.
  • Chill dough if it’s too soft to handle.
  • Store at room temperature up to 4 days or freeze up to 2 months.
