Ingredients
  

  • Crust
  • ½ cup almond flour
  • 2 tablespoons melted butter
  • Cheesecake Filling
  • 8 oz cream cheese softened
  • ¼ cup powdered keto sweetener erythritol or monk fruit
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon lemon juice
  • Optional Toppings
  • Fresh berries
  • Unsweetened coconut flakes
  • Sugar-free chocolate drizzle

Instructions
 

  • Preheat the oven to 325°F (165°C).
  • Line a mini muffin tin with paper liners.
  • In a bowl mix almond flour and melted butter until combined.
  • Press about 1 teaspoon of the mixture into each liner to form the crust.
  • In another bowl beat cream cheese, keto sweetener, vanilla extract, and lemon juice until smooth.
  • Add the egg and mix until fully incorporated.
  • Spoon the cheesecake mixture evenly into each muffin cup.
  • Bake for 12–15 minutes, until the edges are set and the centers slightly jiggle.
  • Remove from the oven and allow the bites to cool completely.
  • Refrigerate for 1–2 hours to firm up before serving.
  • Decorate with berries, coconut flakes, or sugar-free chocolate drizzle if desired.
