- ½ cup unsweetened shredded coconut
- ½ cup fresh or frozen raspberries
- ⅓ cup keto sweetener erythritol or monk fruit
- ¼ cup unsalted butter melted
- 1 teaspoon vanilla extract
- 2 large eggs
- ¼ teaspoon salt
- Optional: coconut cream for drizzle
- Optional: extra shredded coconut
Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
In a bowl, mix almond flour, shredded coconut, keto sweetener, and salt.
Add melted butter and vanilla extract; mix to form a dough.
Press the mixture evenly into the pan to form the crust.
