These Healthy Matcha Truffles are a no-bake, naturally sweetened treat made with dates, nut butter, and matcha powder. Soft, creamy, and lightly sweet, they’re perfect for a healthy snack, meal prep, or a better-for-you dessert—without refined sugar or baking.

- 1 cup Medjool dates pitted
- ½ cup almond flour
- ¼ cup almond butter or cashew butter
- 1 tablespoon coconut oil melted
- 1 –1½ teaspoons matcha powder culinary or ceremonial grade
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional Coatings
- Extra matcha powder
- Shredded coconut
- Cacao powder
If dates are dry, soak in warm water for 5–10 minutes, then drain well.
Add dates to a food processor and blend until a sticky paste forms.
Add almond butter, coconut oil, matcha powder, vanilla extract, salt, and almond flour.
Process until the mixture is smooth and holds together when pressed.
Scoop small portions and roll into bite-sized balls.
Roll truffles in matcha powder, coconut, or cacao powder if desired.
Refrigerate for 20–30 minutes to firm up before serving.

Start with 1 teaspoon matcha and add more to taste—too much can be bitter.
