Ingredients
  

  • cups all-purpose flour or white whole wheat flour
  • 1 tablespoon culinary-grade matcha green tea powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter or coconut oil softened
  • ½ cup coconut sugar or light brown sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons honey or maple syrup optional, for extra moisture
  • Optional Toppings
  • Light dusting of powdered sugar
  • Simple honey or maple glaze

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, matcha powder, baking powder, and salt.
  • In a large bowl, cream butter (or coconut oil) and sugar for about 2 minutes, until smooth and slightly fluffy.
  • Mix in egg and vanilla extract until fully combined.
  • Add honey or maple syrup if using.
  • Gradually add dry ingredients to wet ingredients, mixing just until combined.
  • Scoop rounded tablespoons of dough and place 2 inches apart on prepared baking sheets.
  • Gently flatten tops slightly with your fingers or the bottom of a glass.
  • Bake for 9–11 minutes, until edges are set and centers look soft.
  • Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Cookies should remain light green—avoid browning.
  • Fresh, high-quality matcha makes a big difference in flavor and color.
  • Cookies firm up slightly as they cool while staying soft inside.
