Ingredients
  

  • Pancake Batter
  • 1 cup oat flour or 1 cup rolled oats, blended into flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Wet Ingredients
  • 2 large eggs
  • ½ cup plain Greek yogurt
  • ¼ cup milk dairy or plant-based
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons maple syrup or honey optional
  • Add-Ins
  • 1 cup grated apple Honeycrisp, Fuji, or Gala work best
  • For Cooking
  • Coconut oil or olive oil for the pan

Instructions
 

  • In a large bowl, whisk together eggs, Greek yogurt, milk, vanilla, and maple syrup (if using).
  • Add oat flour, baking powder, cinnamon, and salt. Stir until just combined.
  • Fold in the grated apple.
  • Let the batter rest 5 minutes to allow the oat flour to hydrate.
  • Heat a nonstick skillet or griddle over medium heat and lightly grease with oil.
  • Pour about ¼ cup batter per pancake onto the pan.
  • Cook 2–3 minutes, until bubbles form and edges look set.
  • Flip and cook 1–2 minutes more, until golden and cooked through.
  • Repeat with remaining batter, adding more oil as needed.

Notes

  • Do not overpack the batter with apples—too much can make pancakes soggy.
  • Resting the batter is key for fluffy pancakes when using oat flour.
  • Keep heat moderate to prevent burning before the center cooks.
