Ingredients
  

  • Shortbread Crust
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ tsp salt
  • ½ cup unsalted butter melted or softened
  • Lemon Yogurt Filling
  • 2 large eggs room temperature
  • ¾ cup granulated sugar
  • ½ cup plain Greek yogurt full-fat or low-fat
  • cup fresh lemon juice
  • Zest of 1–2 lemons
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • ½ tsp baking powder
  • For Topping
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven: Preheat to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang.
  • Make crust: In a bowl, mix flour, sugar, salt, and butter until crumbly. Press firmly into the bottom of the pan.
  • Bake crust: Bake 15–18 minutes, until lightly golden.
  • Prepare filling: While crust bakes, whisk eggs and sugar until smooth. Whisk in Greek yogurt, lemon juice, zest, vanilla, flour, and baking powder.
  • Bake bars: Pour filling over the warm crust. Return to oven and bake 22–26 minutes, until the center is just set.
  • Cool & chill: Cool completely at room temperature, then refrigerate at least 1 hour.
  • Serve: Dust with powdered sugar before slicing.

Notes

  • Fresh lemon juice and zest are essential for the best flavor.
  • Do not overbake—bars should be set but still creamy.
  • Chilling makes slicing clean and improves texture.
