Instructions
 

  • Roast the Pumpkin Seeds (Recommended)
  • Preheat oven to 350°F (175°C).
  • Spread pumpkin seeds evenly on a lined baking sheet.
  • Roast for 8–10 minutes, stirring once.
  • Let seeds cool completely before blending.
  • Blend the Seeds
  • Add cooled pumpkin seeds to a high-powered food processor.
  • Blend on high, stopping occasionally to scrape down the sides.
  • Continue blending for 5–8 minutes.
  • The mixture will move through stages: crumbly → clumpy → thick paste → smooth butter.
  • Adjust Texture
  • Blend until smooth and creamy.
  • If too thick, add 1 teaspoon olive oil and blend again.
  • Add salt or sweetener if desired and pulse to combine.
  • Store
  • Transfer to a clean airtight jar.
  • Stir before each use if natural oil separation occurs.
