Ingredients
  

  • Core Ingredients:
  • 2 cups cucumbers sliced or diced
  • 1 cup shelled edamame cooked and cooled
  • For the Dressing:
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp sesame oil
  • 1 tsp honey or maple syrup
  • Optional Add-Ins:
  • 2 tbsp green onions chopped
  • 1 tsp sesame seeds
  • 1/4 tsp chili flakes
  • 1 clove garlic or 1/2 tsp grated ginger

Instructions
 

  • Slice or dice cucumbers and pat dry to remove excess moisture.
  • Cook edamame if needed and let cool completely.
  • In a bowl, whisk together soy sauce, vinegar, sesame oil, and sweetener.
  • Add cucumbers and edamame to the bowl.
  • Toss well to coat evenly with dressing.
  • Add optional toppings like sesame seeds and green onions.
  • Chill for 10–15 minutes before serving.

Notes

  • Use fresh, crisp cucumbers for best texture.
  • Always dry cucumbers to prevent watery salad.
  • Adjust dressing to taste.
  • Store in fridge up to 2–3 days.
  • Stir before serving as dressing may settle.
