- 2 cups cucumbers sliced or diced
- 1 cup shelled edamame cooked and cooled
- For the Dressing:
- 2 tbsp soy sauce or tamari
- 1 tbsp rice vinegar or lemon juice
- 1 tsp sesame oil
- 1 tsp honey or maple syrup
- Optional Add-Ins:
- 2 tbsp green onions chopped
- 1 tsp sesame seeds
- 1/4 tsp chili flakes
- 1 clove garlic or 1/2 tsp grated ginger
Slice or dice cucumbers and pat dry to remove excess moisture.
Cook edamame if needed and let cool completely.
