Ingredients
  

  • 2 large portobello mushrooms cleaned and thinly sliced
  • 2 cups collard greens stems removed and thinly sliced
  • 4 slices sturdy bread sourdough or sandwich bread
  • 4 –6 slices cheese sharp cheddar, provolone, or fontina
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1 –2 tablespoons butter or mayonnaise for grilling bread
  • Salt and black pepper to taste
  • Optional Add-Ins
  • Thinly sliced onion
  • Crushed red pepper flakes
  • Dijon mustard or garlic aioli

Instructions
 

  • Wash collard greens thoroughly and slice thinly. Slice portobello mushrooms evenly.
  • Heat olive oil in a skillet over medium heat.
  • Add portobello mushrooms and cook 5–7 minutes, until browned and moisture has evaporated.
  • Add garlic (and onion if using) and cook 30 seconds until fragrant.
  • Add collard greens and a pinch of salt. Cook 3–4 minutes, until wilted and tender. Remove from heat.
  • Spread butter or mayo on one side of each bread slice.
  • Place bread butter-side down in a skillet over medium-low heat.
  • Layer cheese, vegetable mixture, more cheese, and top with remaining bread slice.
  • Cook 3–4 minutes per side, until bread is golden and cheese is fully melted.
  • Remove from heat and rest 1–2 minutes before slicing.

Notes

  • Cook mushrooms thoroughly to avoid excess moisture.
  • Use medium-low heat so cheese melts before bread browns too much.
  • Cheese acts as the “glue”—don’t skimp.
  • Resting helps the sandwich hold together when sliced.
