  • 1 whole avocado, diced Choose ripe avocados for best taste.
  • 1 cup mixed greens Any variety of mixed greens works.
  • 1/2 cup sliced almonds For added crunch.

Preparation

  • In a skillet, heat the olive oil over medium heat.
  • Add the shrimp, seasoned with salt and pepper, and sauté until they turn pink and opaque—about 2-3 minutes on each side.
  • Remove from heat and let them cool slightly.

Mixing the Dressing

  • In a small bowl, whisk together the freshly squeezed orange and lemon juices.
  • Feel free to add a pinch of salt for extra flavor.

Assembling the Salad

  • In a large serving bowl, add the mixed greens, diced avocado, and sliced almonds.
  • Gently fold in the cooked shrimp, taking care not to mash the avocado.

Dressing and Serving

  • Pour the citrus dressing over the salad and give it a gentle toss to evenly coat all ingredients.
  • This salad is best served fresh, but it can be made ahead of time and stored in the fridge for a couple of hours.
  • Toss again before serving.

Notes

For extra flavor, marinate the shrimp in the citrus juices for about 30 minutes before cooking. Store in an airtight container in the refrigerator for up to a day, adding lemon juice over the avocado to prevent browning.
