  • 4 large russet potatoes cut into fries or wedges
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • ½ teaspoon garlic powder optional
  • ½ cup crumbled feta cheese
  • Fresh parsley chopped (optional garnish)
  • Tzatziki Sauce
  • 1 cup Greek yogurt
  • ½ cucumber grated and squeezed dry
  • 1 garlic clove minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or 1 teaspoon dried
  • Salt to taste

Instructions
 

  • Marinate the Chicken
  • In a large bowl combine:
  • Greek yogurt
  • Olive oil
  • Garlic
  • Lemon juice
  • Oregano
  • Paprika
  • Salt and pepper
  • Add the chicken cubes and toss until fully coated.
  • Cover and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).
  • Thread the marinated chicken onto skewers.
  • Cook the Feta Fries
  • Preheat the oven to 425°F (220°C).
  • Toss the cut potatoes with:
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder (optional)
  • Spread fries in a single layer on a baking sheet.
  • Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
