Ingredients
  

  • 4 cups grated carrots about 4–5 medium carrots
  • ¼ cup raisins or dried cranberries
  • ¼ cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Add-ins
  • ¼ cup chopped walnuts or almonds
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped green onions

Instructions
 

  • Wash and peel the carrots.
  • Grate the carrots using a box grater or food processor.
  • Place the shredded carrots in a large mixing bowl.
  • In a small bowl, whisk together lemon juice, olive oil, honey (or maple syrup), salt, and black pepper.
  • Add raisins, chopped parsley, and optional nuts or green onions to the carrots.
  • Pour the dressing over the salad.
  • Toss everything together until the carrots are evenly coated with the dressing.
  • Let the salad rest for 10–15 minutes before serving to allow the flavors to blend.
  • Garnish with extra parsley or lemon zest if desired.
