Ingredients
  

  • 2 cans 15 oz each white beans (cannellini or great northern), drained and rinsed
  • 2 cups fresh cherry tomatoes
  • ¾ cup sliced pepperoni
  • 3 cloves garlic minced
  • ¼ small red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella optional
  • Fresh basil or grated Parmesan for garnish optional

Instructions
 

  • Preheat Oven
  • Preheat oven to 400°F (200°C).
  • Lightly grease a 9x9 baking dish or oven-safe skillet with olive oil.
  • Prepare the Bean Base
  • In a mixing bowl, combine drained beans, minced garlic, sliced onion, tomato paste, olive oil, oregano, basil, red pepper flakes (if using), salt, and black pepper.
  • Stir until evenly coated.
  • Assemble
  • Spread the bean mixture evenly in the baking dish.
  • Scatter cherry tomatoes over the top.
  • Add sliced pepperoni evenly across the surface.
  • Bake
  • Bake uncovered for 20–25 minutes.
  • Tomatoes should blister and begin to burst.
  • Pepperoni edges will slightly crisp.
  • Add Cheese (Optional)
  • Sprinkle mozzarella over the top.
  • Return to oven for 5–7 minutes until melted and bubbly.
  • Rest & Serve
  • Let rest for 5–10 minutes before serving.
  • Garnish with fresh basil, Parmesan, or a drizzle of olive oil.

Notes

  • Pat beans dry lightly after rinsing to prevent excess moisture.
  • Do not overcrowd with too many tomatoes or the dish may become watery.
  • For extra creaminess, gently mash a small portion of the beans before baking.
  • If reheating in the oven, add a splash of broth or water to prevent drying.
