Ingredients
  

  • 1 cup creamy unsweetened almond butter
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • ¼ cup unsweetened cocoa powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup dark chocolate chips or chunks 60–70% cacao

Instructions
 

  • Preheat oven: Preheat to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix wet ingredients: In a large bowl, stir together almond butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla and mix until fully combined.
  • Add dry ingredients: Stir in cocoa powder, baking soda, and salt until a thick dough forms.
  • Fold in chocolate: Gently fold in dark chocolate chips or chunks.
  • Shape cookies: Scoop dough into balls and place on the baking sheet, spacing them apart. Lightly flatten each cookie.
  • Bake: Bake for 9–11 minutes, until edges are set and centers look slightly underbaked.
  • Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Stir almond butter well if it has separated oil.
  • Cookies will firm up as they cool—don’t overbake.
  • For thicker cookies, chill dough for 15–20 minutes before baking.
