  • 2 cups cooked chicken, diced
  • 1 cup edamame, shelled
  • 2 cups mixed salad greens
  • 1 cup carrots, shredded
  • 1 cup cucumber, sliced
  • 1 cup bell pepper, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame seeds

Dressing Ingredients

  • 1/3 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • to taste salt and pepper

Instructions
 

Preparation

  • Cook the chicken by boiling, grilling, or roasting it until done.
  • Let the cooked chicken cool before dicing.
  • Wash and chop the vegetables into bite-sized pieces.
  • In a large bowl, combine the salad greens, carrots, cucumber, bell pepper, and green onions. Toss gently.

Dressing

  • In a medium bowl, mix the peanut butter, soy sauce, rice vinegar, honey, sesame oil, salt, and pepper until smooth.
  • Adjust consistency by adding a dash of water if needed.

Assembly

  • Drizzle the dressing over the salad and toss until well coated.
  • Sprinkle sesame seeds on top for extra crunch and flavor.

Notes

For a vegetarian version, substitute chicken with tofu or chickpeas. Make the salad ahead of time, keeping the dressing separate until serving to prevent sogginess.
