- 2 tablespoons olive oil or butter
- 1 small onion finely diced
- 3 cloves garlic minced
- 2 tablespoons cornstarch or all-purpose flour
- 3 cups chicken or vegetable broth
- 4 cups broccoli florets chopped
- 1½ cups sharp cheddar cheese freshly shredded
- 1 cup plain Greek yogurt
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- Salt to taste
Heat olive oil or butter in a large pot or Dutch oven over medium heat.
Add diced onion and cook for 4–5 minutes, until soft and translucent.
Add garlic and cook for 30 seconds, stirring constantly.
Sprinkle in cornstarch or flour and stir for 1 minute.
Slowly pour in broth, stirring constantly to prevent lumps. Bring to a gentle simmer.
Add broccoli florets and cook for 8–10 minutes, until tender but bright green.
Reduce heat to low. Stir in shredded cheddar cheese a handful at a time until melted.
Remove from heat and stir in Greek yogurt and Dijon mustard until smooth.
Season with salt and black pepper to taste.
Let rest for 5 minutes before serving.
