Ingredients

  • 2 –3 ripe but firm bananas
  • ½ cup creamy peanut butter
  • 1 cup chocolate chips semi-sweet or dark
  • 1 teaspoon coconut oil optional, for smoother chocolate

Instructions

  • Line a baking sheet with parchment paper.
  • Slice bananas into even rounds, about ½-inch thick.
  • Place half of the banana slices on the baking sheet.
  • Spread a small amount of peanut butter on each slice.
  • Top with remaining banana slices to form little sandwiches.
  • Freeze for 20–30 minutes, until firm.
  • Melt chocolate chips (and coconut oil, if using) in a microwave-safe bowl in 20–30 second intervals, stirring until smooth.
  • Dip each frozen banana bite into the melted chocolate, coating evenly.
  • Let excess chocolate drip off and return bites to the baking sheet.
  • Freeze for 10–15 minutes, until chocolate is fully set.

Notes

  • Use firm bananas so the bites hold their shape.
  • Don’t overfill with peanut butter—it can squeeze out during dipping.
  • If chocolate thickens, reheat briefly and stir.
