These Chocolate Almond Quinoa Snack Bars are chewy, lightly sweet, and packed with protein and fiber. Made with cooked quinoa, oats, almond butter, and rich cocoa, they’re an easy, no-bake snack perfect for meal prep, lunchboxes, workouts, or busy afternoons—wholesome fuel that actually tastes great.

- 1½ cups cooked quinoa fully cooled
- 1½ cups rolled oats old-fashioned
- ¾ cup almonds roughly chopped
- ½ cup creamy almond butter
- Flavor Base
- 3 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- Pantry Staples
- ⅓ cup honey or maple syrup
- ½ cup chocolate chips dark or semi-sweet
- Pinch of salt
- 1 –2 tbsp coconut oil optional, for extra binding
Prep
If quinoa isn’t cooked yet, rinse and cook according to package directions. Cool completely.
Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
No-Bake Assembly
In a large bowl, mix quinoa, oats, almonds, cocoa powder, and salt until evenly combined.
In a small saucepan over low heat, warm almond butter, honey/maple syrup, and coconut oil (if using) until smooth and pourable. Remove from heat; stir in vanilla.
Pour the warm mixture over the dry ingredients and mix until fully coated.
Fold in chocolate chips.
Press the mixture firmly into the prepared pan, packing it tight with a spatula or the back of a spoon.
Set
Refrigerate 1–2 hours until firm. Lift out and slice into bars or squares.
