- Main Ingredients
- 6 cups fresh baby spinach washed and dried
- 2 cups fresh strawberries hulled and sliced
- ¼ small red onion thinly sliced
- Dressing
- 3 tbsp balsamic vinegar
- 1½ tbsp honey or maple syrup
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- ¼ cup extra-virgin olive oil
- Optional Toppings
- ¼ cup sliced almonds pecans, or sunflower seeds
- Feta cheese or goat cheese optional
Prepare the Dressing
In a small bowl or jar, whisk together balsamic vinegar, honey, Dijon mustard, salt, and pepper.
Slowly whisk in olive oil until fully emulsified.
Assemble the Salad
In a large bowl, add spinach, strawberries, and red onion.
