  • 2 celery stalks diced
  • 1 small yellow onion finely diced

  • 1 tsp dried oregano or thyme

  • ½ tsp black pepper
  • Zest of 1 lemon
  • ¼ cup fresh lemon juice more to taste

  • 1 tbsp olive oil
  • 6 cups low-sodium chicken broth
  • 1 bay leaf optional
  • Optional Garnish
  • Fresh parsley or dill
  • Extra lemon wedges

Instructions
 

  • Pre-Cooking Prep
  • Dice onion, carrots, and celery.
  • Mince garlic, zest the lemon, and juice it.
  • Cut chicken into even, bite-sized pieces.
  • Cooking Method
  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook 4–5 minutes until softened.
  • Stir in garlic and cook 30 seconds until fragrant.
  • Add chicken, oregano, salt, and pepper. Cook 2–3 minutes, just until chicken turns white.
  • Pour in chicken broth and add bay leaf if using. Bring to a gentle boil.
  • Stir in orzo, reduce heat to medium-low, and simmer 8–10 minutes, stirring occasionally, until orzo is tender.
  • Remove from heat and stir in lemon juice and lemon zest.
  • Remove bay leaf and taste, adjusting seasoning as needed.
